A centrifugal separator is a device used to separate any two liquids from each other based on their relative density. The device consists of one or more rotating cylinders that create a centrifugal force when they are set into motion. The centrifugal force causes the suspended particles to migrate away from the axis of rotation, which allows the heavier particles to settle at the bottom of the cylinder, while the lighter ones rise to the top. The two liquids then can be collected separately.

Centrifugal separators have a wide range of applications, but are most commonly used in the food, beverage, and pharmaceutical industries to separate solid particles from liquids. In the food processing industry, a centrifugal separator is used to separate fat and other solid particles from milk and cream during the production of cheese and other products. It is also used to separate cream from milk during homogenization.
