As far as. the physical properties, evaporation is a relatively simple process that involves two basic principles. First, for evaporation to occur, liquid molecules must become energetic enough to break away from the normal liquid environment in which they are held. Secondly, the atmosphere must be able to absorb the vapor and disperse it evenly by mixing the vapor with air.
In order for evaporation to take place, heat is needed to increase the temperature and energy of the molecules in the liquid. Because of this, it is often said that evaporation ‘uses’ the heat or energy held by the liquid, but it should be noted that the total amount of energy in the system remains the same. This means that the amount of energy used to evaporate one gram of liquid equals the latent heat of vaporization of the liquid. The latent heat of vaporization is the energy which has to be ‘taken away’ from the liquid in order for it to become vapor.
The rate of evaporation of a liquid depends on several factors, including the air temperature, air pressure, humidity and the surface area of the liquid. Generally, evaporation increases with increasing temperature, decreasing air pressure and increasing surface area of the liquid. All of these factors affect the vapor pressure of the atmosphere, which is the pressure exerted by the vapor of a liquid. An increase in the vapor pressure of the atmosphere is a signal that the atmosphere can absorb more vapor and therefore the rate of evaporation will increase.
When a liquid evaporates, the process is commonly referred to as ‘boiling’. This is because the molecules become so energetic that they begin to escape the surface of the liquid in bubbles. Of course, this is only the case if the liquid is physically disturbed, such as by stirring. If the liquid is left undisturbed, the evaporation will take place but will be much slower and less noticeable.
